Serves 12
Dough: 3 cups @250gms All Purpose Flour (Maida) 2 tsp Yeast 2 tbsp Yogurt 2 tbsp Milk powder 2 tbsp Butter 1 tbsp Oil 1 tsp Salt 1 tsp Sugar 1 tbsp Parsely and Basil (chopped) Long Kebabs: 1 kg Mince Meat 1/2 bunch Corriander leaves (chopped) Few Mint leaves (chopped) Salt (as required) 1/2 tsp Chilli powder 3 Green chillies 1 tsp Cummin seeds (powder) 1/2 tsp Garam masala 1/2 tsp Blackpepper (pounded) 2 tbsp Oil 1 Onion 2 tbsp Yogurt
Directions
Dough: 1) Mix ingredients well, add the rest and mix well 2) Then bind soft dough using hot water, knead well till dough is soft 3) Let it rise to double in size 4) Punch back make balls, roll each into roti 5) Fill with either fried sausage or long kebabs 6) Keep on greased tray, let it rise for half an hour then bake in oven on 200C Long Kebabs: 1) Blend together yogurt, corriander, onion and mint leaves, green chillies, all spices, salt and oil 2) Double mince the mince meat, mix the yogurt mixture with it and marinate for three hours 3) Shape in seekh kebabs and arrange on tray 4) Put in skewers then char grill till done (or can just use thin net if not using skewers), can pan fry too
