Wash spinach leaves very well under the running water. Chopped them into thin stripes. Add makki ka atta and mix very well.
Heat oil in a kadhai. Fry all spinach stripes until crispy. Remove from oil and keep it in absorbent paper.
Heat 2 tsp oil in a pan. Add chopped ginger garlic,green chilly and chopped red chilly.saute for a second. Add soy sauce and vinegar and mix well. Now add fried spinach and toss it carefully. Add salt and seaseme seeds and toss.dont use spoon for mixing spinach. Only toss it carefully.
Off the flame and serve hot crispy spinach with tea or coffee garnish with seaseme seeds.
