Microwave the sweet potatoes or steam them.
Combine besan with red chili powder, turmeric powder, coriander-cumin powder, chaat masala, amchur and salt. Whisk well.
Heat oil in nonstick pan. Add panch phoron, green chilies and garlic. Sauté for few seconds. Don't let the garlic brown.
Add onions and cook till they are very lightly colored.
Add sweet potatoes and dill leaves. Stir fry till dill leaves wilt.
Add the besan mixture. Combine well with leaves. Cover and let it cook for 5-10 minutes till aromatic.
Finally add the ground peanuts. Stir well and Steve hot with chapati/roti.
