Ingredients

Serves : 2
  • 1 nos cucumber


  • 1 nos medium onion


  • 1 cups cleaned and shredded spinach


  • 1 cups lump free curd


  • 1 tsp cumin seeds


  • 1/2 cups rice flour


  • 1 nos green chili finely chopped


  • 1/2 tsp salt


  • 1/2 tsp red chilli or blk proper powder as per choice


  • 1 tbsp oil

Directions

  • Grate cucumber and add little salt on it Leave it in a bowl for ten minutes
  • a Adding salt will help cucumber in leaving its water. Squeeze the cucumber nicely and add with other ingredients to make pancakes Take all the ingredients except oil in a bowl and make a batter by adding curd and little water to it. Let the batter rest for some time so that rice flour can absorb the water and swell.
  • The batter shouldn’t be runny nor it should be very thick
  • Heat a non stick pan/ tawa. When it’s hot enough pour two laddles of the mixture on spread like a pancake
  • Apply little oil on the sides(around it) When you see the sides have become brown slightly, turn it and let it cook on the other side too
  • When pancake is done remove it from the pan and serve hot & crispy pancake with ketchup or any chutney
  • Note:- the Water squeezed from cucumber can be used in vegetable juice or making raita too
