Finely chopped all the vegetables and leaves into small pieces.
Soak both the daals into water for 3 hours.
In a pressure cooker keep water to boil.
After water starts boiling, add both moong and chana daal to it.
Now add chopped spring onion greens, dill leaves, spinach leaves, cabbage, cauliflower, capsicum, sweet potato, carrot, bottle gourd, peas, green tuvar, turmeric root chopped, ginger garlic paste, salt and mix properly.
Add chopped tomatoes, garlic green, salt to it and give it a good stir.
Now cover the lid of cooker and pressure cook it up to 4 whistles.
After switching off flame, release the pressure of cooker so that green color of vegetables will maintained.
Now keep it on low flame and using pav bhaji mesher, keep meshing this mixture. Alternatively, you can stirr it continuously into one direction. The name of dish 'ghuto' means crushing it.
You can add water to adjust the consistency if required. When you get desired consistency, switched off the flame
Add some coriander leaves at the end and mix it.
Ghuto is served with bajra bhakti(bajri no rotlo), spring onion, green chilli, jaggery and butter milk.
Enjoy this traditional dish which is winter special dish as in winter, we get many fresh vegetables and leafy green.
