Serves : 3
  • 100 gm fresh spring onion washed and finely chopped

  • 1/2 bowl of finely chopped potato and pumpkin

  • 3 tbsp of fried and soaked yellow moong dal

  • 1 medium tomato chopped

  • 5 cloves garlic minced

  • 1 green chili chopped

  • 1/3 tsp mustard seeds

  • 1/3 tsp tumeric powder

  • 1/2 tsp salt


  • In a pressure cooker take spring onion , chopped veggie , soaked moong dal and 1/2 cup of water.
  • Cook for 1 whistle and switch off the flame. Allow the cooker cool naturally.
  • Heat oil in a pan. Add mustard seeds and allow to splutter.
  • Now add chopped green chili and minced garlic. When the aroma comes and garlic turn light brown ,add chopped tomatoes.
  • Cook tomatoes till soft and mushy. Then add the cooked spring onion with veggies from the pressure cooker.
  • Cook in high flame to evaporator excess water.
  • Spring Onion Subzi is ready to serve with steamed rice and/or roti.
