In a pressure cooker take spring onion , chopped veggie , soaked moong dal and 1/2 cup of water.
Cook for 1 whistle and switch off the flame. Allow the cooker cool naturally.
Heat oil in a pan. Add mustard seeds and allow to splutter.
Now add chopped green chili and minced garlic. When the aroma comes and garlic turn light brown ,add chopped tomatoes.
Cook tomatoes till soft and mushy. Then add the cooked spring onion with veggies from the pressure cooker.
Cook in high flame to evaporator excess water.
Spring Onion Subzi is ready to serve with steamed rice and/or roti.
