Ingredients

1 small fresh green broccoli
1 finely chopped onion
1 tbsp butter
1 tbsp refined flour or maida
15-20 blanched almonds
2 bay leaves
1 Cup milk
1/2 tsp salt
1/2 tsp Black pepper powder
Directions
Boil some water.Add salt.Boul broccoli florets just for 2-3 minutes to enhance colour.Keep ice cold water ready.strain water from broccoli and quickly put broccoli in cold water to stop further cooking and to keep its green colour intact.
Take 1 tbsp butter in a pan, Heat it.Add chopped Onion.Saute till soft.Add bay leaves and Saute.
Now add 1 tbsp refined flour and Roast it along with Onion.Add milk.Add 1 Cup water to maintain its consistency.
Strain the mixture.Grind blanched broccoli in a mixi jar by adding little water and make its puree.Transfer in a bowl.
Chop thin slices of blanched almonds.Toast these slices in a pan on low flame.
Heat Boil the strained mixture in a pan.Add broccoli puree in the milk mixture.After adding puree, do not Boil for too long otherwise it's colour will fade away.Add salt, Black pepper powder.
While serving add toasted almonds in serving bowl then Serve soup in it.Garnish with toasted almonds slices.
