Ingredients

  • 1 bunch fresh Spinach


  • 1 tablespoon white Sesame seeds


  • 1 teaspoon red Chilli flakes


  • 1/4 tsp Sugar


  • 1/4 tsp Salt


  • 1 cup Vegetable oil to deep fry

Directions

  • Take fresh spinach leaves, trim the stem and clean properly.
  • Spread the leaves in a tray to make the leaves dry. As we are going to deep fry them, it is necessary to make the leaves dry.
  • Chop the leaves very thin with a sharp big knife.
  • Heat sufficient oil in a deep pan to deep fry the spinach.
  • When oil is very hot,carefully drop the chopped spinach to oil in batches. Don't drop more leaves, as they contain a lot of moisture. If you drop more leaves, oil may get cold and leaves may not fry nicely. Fry them quickly in very hot oil.
  • After frying 30-40 seconds remove them from oil with a perforated spatula.
  • Keep them in a kitchen towel to remove excess oil.
  • Repeat the same process to fry all the spinach.
  • In a pan dry roast some white sesame seeds.
  • Add dry roasted sesame seeds, chilli flakes, sugar and salt to the fried spinach and mix lightly.
  • Serve immediately as snack or appetizer. They are so crispy and light.
