Ingredients

Serves 3

  • 200g Mushrooms

  • 1 Carrot

  • 1 Zucchini

  • 0.5 Onion

  • 1 bundle spring onions

  • 2 twigs Rosemary

  • 1 Salt, Pepper, Garlic

  • 1 teaspoon Grana Padano

  • 50ml Red Wine

  • 250g Double cream

Directions

  • 01

    Julienne carrots, slice Mushrooms, dice Zucchini & chop onion / spring onion (separating green/white)

  • 02

    cook carrots for 5 mins in boiling water

  • 03

    Fry onions for 2m, add mushrooms & vegis & fry until softish.

  • 04

    Add red wine, then cream & simmer for 5 mins
