Blanch the spinach leaves in boiling water for 2-3 minutes and make puree of it.
Mix salt, sugar, citric acid, soda bi carbon into besan and mix well.
Add oil, water and spinach puree into it and prepare batter
Grease the plate using oil, pour the batter and steam it in idli steamer for 12-15 minutes.
After it will cook properly, let it cool down a bit, unmould it and cut into disk using cookie cutter.
To prepare podi masala, in a pan heat oil. Add mustard seeds, fenugreek seeds, cumin and let it splutter.
Now add chana daal and udad daal, dry red chilli, Dessicated coconut, salt, garlic and roast it till it leaves aroma.
Grind it to a powder using mixer jar. Your podi masala is ready.
Prepare tempring by heating oil. Now add mustard seeds to it. Let it splutter. now add 2 tsp podi masala to it and pour over our dhokla
Spinach besan dhokla with podi masala is ready to serve
