Ingredients

Serves : 4
  • 2 cups Cooked rice


  • 1 chopped medium size tomato


  • 1/2 cup Chopped coloured bell pepper


  • 1/2 cup Cooked black beans


  • Chopped onion 1 medium size


  • 1/4 cup Sweet corn


  • 1 tsp Paprika powder


  • 2 tbsp Olive oil


  • 4-5 Garlic cloves peeled and crushed


  • 1/2 tsp Black pepper powder


  • 2 tbsp fresh lemon juice


  • to taste Salt


  • For garnish:-


  • 3-4 tbsp Feta cheese


  • 2-3 tbsp Green onions chopped


  • 1 Sliced avocado

Directions

  • Steps for preparing Mexican fried rice:-
  • Heat a wide pan over medium heat,add 2 tbsp of olive oil.    
  • Add the 1 chopped onion to hot oil and saute for 3 to 4 minutes or until soft.
  • Now add 4-5 crushed garlic, and cook for 1 to 2 minutes or until the garlic begins to brown and raw smell goes away.    
  • Add 1/2 cup chopped bell pepper(I used red,yellow and green bell pepper),1 medium size chopped tomato,1/4 cup sweet corn.    
  • Cook until vegetables are soft and no liquid is left in the mixture.
  • Now add cooked 1/2 cup black beans(I used canned black beans),salt to taste,1tsp paprika,1/2tsp black pepper powder.Stir everything well.    
  • Add the cooked rice and stir until rice is well combined with the onion and vegetable mixture.
  • Turn off the heat pour 2 tbsp fresh lemon juice and once again give a stir well.    
  • Divide mexican rice into serving bowls, garnished with chopped green onions,feta cheese,sliced avocado and serve hot.
