Ingredients for preparing pesto:-
2 cups fresh basil leaves
1/4 cup Pine nuts/sunflower seeds
Garlic cloves 6-7 no
2 tbsp grated Parmesan cheese
to taste Salt
1/3 cup olive oil
1 tsp honey
1/8 tsp freshly ground black pepper
Ingredients for preparing tart:-
2 homemade frozen puff pastry sheets, thawed at room temperature
1/2 cup pesto
2 medium tomatoes, sliced
1/2 cup shredded mozzarella and cheddar cheese
5-6 olives sliced
5-6 pickled jalapeno
1 tbsp Black pepper powder
Steps for preparing pesto:-
In a mixer jar add washed basil leaves,honey, pine nuts,salt, garlic,black pepper powder and Parmesan cheese along with olive oil.
Grind all the ingredients in a grinder to get smooth paste.
Remove pesto in jar and keep aside.
Steps for preparing tart:-
Preheat the oven to 200*c for 10 minutes and line a baking tray with parchment paper .
Lightly dust work surface and one puff pastry sheet with flour.
Roll pastry to 15-inches by 10-inches and cut into 5-inch squares.
Spread 2 tsp pesto carefully with a spoon to about 1/2 inch from the edges.
Sprinkle 1 tbsp of grated mozzarella and cheddar cheese on pesto.
Lay tomato slice,olive and sliced jalapeno on cheese.
Sprinkle 1 tbsp of grated mozzarella and cheddar cheese on pesto,and seasoned with black pepper powder.
Place tart carefully on lined baking tray.
Bake in preheated oven for about 12 minutes or until the puff pastry is golden brown and the cheese is bubbly.Remove from oven and serve hot.
