Ingredients

Serves : 2
  • 1/2 Cup (200ml cup) red kidney beans Soaked for 6-8 hrs


  • 1 tbsp olive oil


  • 1 tsp Cumin seeds


  • 3/4 Cup tomato puree


  • 1 tsp red chilli powder for sprinkling


  • 1 tsp garam masala


  • 1 tsp Coriander powder


  • 1/2-1 tsp salt


  • 3 tbsp red kidney beans stock


  • 1 tbsp fresh cream


  • 1 medium size tomato deseeded and finely chopped


  • 1 Cup Whisked Yogurt


  • 1/4 Cup green Coriander mint chutney for drizzling


  • 1/4 Cup Tamarind date chutney for drizzling


  • 1 tsp chaat masala for sprinkling


  • 1-2 tbsp Coriander leaves for garnishing

Directions

  • 1)In a pan Heat oil,add Cumin seeds .Let it splutter.
  • Now add tomato puree.Saute for 2-3 minutes till it's raw smell vanishes.
  • Now add Boiled red kidney beans,salt.Mix well.Add beans stock.Cook for 2-3 minutes.
  • Now add fresh cream.Mix well.cook for 1 minute.Transfer in a bowl and slightly cool.
  • Add chilli powder,garam masala,Coriander powder.mix well.transfer to the same pan and cook for 1-2 minutes
  • Arrange Nachos in a serving plate.
  • Top them with red beans mixture and chopped tomatoes.
  • Drizzle green chutney,tamarind date chutney on Nachos.sprinkle Chaat masala and red chilli Powder on top.Garnish with Coriander leaves.
  • Serve Indo Mexican Chaat quickly.
