Serves 4

  • 3 carrots

  • 3 eggs

  • 3 tbsp all purpose flour

  • 4 tbsp milk powder

  • 6 tbsp sugar (add more or less acxording to your preference)

  • 1 pinch salt

  • 4 cardomom

  • 1 tsp rose water

  • 2 tbsp cashews and raisins(golden, black)

  • 1 tbsp ghee

    Take 3 carrots wash and cut into cubes and cook with required water till soft

    Take a mixie jar and add 3 eggs and beat well, add rose water to the egg(this is added to take out the smell of egg)

    one by one put all the ingredients milk powder, flour, salt, sugar, cardomom.

    Add cooked carrot and grind well.

    Take a pan add ghee and roast the cashews and raisins and keep aside

    In the same pan add the carrot mix,on the gas stove and keep a old pan let it heat, on that keep the carrot mix pan and close the lid.

    Let it cook on medium flame. After 8 minutes open the lid and garnish with the fried nuts(here I used black sesame seeds to look attractive) close and cook it for another 5-8 mins. check it with a tooth pick if it comes clean. It's done(at this point of time the top will be little soft)

    Take a plate and flip the carrot kums on to the plate and put it back to the pan(as the upside of the cake should touch the base of the pan) Just cook for 1-2 mins. AND It's READY!!!

    Note: Mine it took 15-20 mins. The time will vary according to your pan size and thickness of carrot batter. similarly can make with Apple, Plantains,Dates. Just replace the carrots and enjoy the varieties.

    ***It resembles cake,steamed pudding prepared on stove top within minutes. It's very easy and tasty one pan dish.(Any cake that uses a mix of egg,sugar and any fruit or vegetable or flavours has been called kums.It's a malabar dish and can be easily made with easily available ingredients. Everything can be added in mixie,poured in a pan and cooked,can be easily made by children too and it's a great snack.***
