Wash rice trice then soaked in water for ½ an hour. By the time wash and cut cauliflower, carrots, beans, tomatoes in big pieces. Keep aside.
Now chopped onion finely then grate ginger. Keep them separately in bowls
Put rice in strainer so excessive water will drain.
Heat a heavy bottom kadai on high flame then put oil and 1/2 tbsp ghee in kadai and heat till smoke comes out. In this process mustard punching flavor will be reduced
Now drop cinnamon,green cardamom, cloves, peppercorn, cumin seeds, bayleaf one by one and fry till aroma comes out.
Put onion in kadai and stir very well. After a minute add 2 pinch of salt and stir very well. Fry Onion for 2-3 min.on high flame
Once its colour reaches to pink colour add ginger, garlic paste and stir well and cook for 1min.
After a minute of cooking onion turns into brown colour then add the tomatoes, turmeric powder, chilli powder, coriander powder, cumin powder then stir very well. Cover it with the lid and cook for 2 minutes
After 2 minutes remove lid, now we'll add carrot pieces as it takes more time to cook and stir very well. Cook it for a minute with lid on low medium heat.
After one minute of cooking carrot now it's time to add cauliflower, french beans ; mix well.
Cover it with a lid and cook them for 5 minutes on low flame so that veggies will become tender ; absorbed spices aroma and flavor.
Now it's time to add soaked rice and stir well. Increase heat on medium. We'll cook rice for another 5 minutes. Stir 3-4 times so that rice will evenly fry and coated with spices
By the time put 3 cup water(double to rice quantity) in a pressure cooker ; boil it on high flame.
Put fried rice with veggies, salt, garam masala in the cooker then stir once.
Close the lid of the cooker and cook it on medium high flame till one whistle. Switch off the gas station, cool down naturally.
Open the lid. Serve hot TAHRI with salted curd / any raita as per your preference.
