Scrape away the skin of the carrot and rinse them well in water. And chop them finely into small quarter-inch pieces. Then add enough water and salt. Allow them to cook covered in a medium-low flame until done.stain and keep aside.
Heat oil in a pan splutters mustard seed. Add sliced shallots, green chilly and curry leaves; saute well.
Add the turmeric powder; saute till raw smell goes off.
Next, add grated coconut and mix well.
Then add cooked carrot mix well.
Keep sauteing for a few minutes and turn off the flame.
