Ingredients

Serves : 4
  • Carrot - 4 (nos) chopped


  • Grated coconut - 1/2 cup (small bowl)


  • Shallot - 5 nos (sliced)


  • Green Chilly - 5 (slit)


  • Curry Leaves - 1 sprig


  • Mustard seed - 1/2 teaspoon


  • Turmeric Powder - 1/4 teaspoon


  • Salt to taste -1/4 teaspoon


  • Coconut Oil - 21/2 tablespoon


  • Water - 1/2 cup (as per required)

Directions

  • Scrape away the skin of the carrot and rinse them well in water. And chop them finely into small quarter-inch pieces. Then add enough water and salt. Allow them to cook covered in a medium-low flame until done.stain and keep aside.
  • Heat oil in a pan splutters mustard seed. Add sliced shallots, green chilly and curry leaves; saute well.
  • Add the turmeric powder; saute till raw smell goes off.
  • Next, add grated coconut and mix well.
  • Then add cooked carrot mix well.
  • Keep sauteing for a few minutes and turn off the flame.
  • That's it! Serve hot and enjoy :o)
