Ingredients

Serves : 5
  • Eggs 4 make a bhurji


  • Par Boil Rice 1 cup


  • Onion 1 finely chopped


  • Tomato 1 finely chopped


  • Green chilly 2 , ginger 1" , garlic aste 1 tbsp


  • Garam masala 1 tbsp


  • Black pepper 1 tsp


  • Fresh Coriander leaves 2 tbsp


  • Salt to taste 1 tsp


  • Oil 2 tbsp

Directions

  • Take 2 cup rice. Wash properly twice. Boil the rice. Drain the excess water and keep aside.
  • Tske a large bowl. Break 3 eggs. Add black pepper and salt. Mix......it well.
  • Heat oil in kadai. When the oil is hot. Add eggs mix it well. Fry till it become bhurji. Once it is done. Keep aside.
  • In the same kadai. Add little oil. Add mustard seeds and curry leaves. Let it crackle.
  • Add choppef onion. Fry till it becomes light brown incolour. Then add chopped tomato fry till it become tender . Add boil rice. Saute it for few minutes.
  • Add black pepper, garam masala and salt. Fry for 3 minutes.
  • Then add egg bhurji. Mix.....it well.
  • In a bowl. Break one egg. Add salt and black pepper mix it well.
  • Take a pan. Add oil. When the oil is hot. Pour the egg mixture and make a omelate
  • Transfer the egg fried rice in a serving plate. Decorate with egg omelate and garnish with fresh coriander leaves
  • Ready to serve
