Goat Cheese & Sundried Tomatoes Open Faced Sandwich

  • 1 block goat cheese (garlic and herb flavor)

  • 1 loaf french loaf

  • 1 bottle sundried tomatoes

  • 1/2 cup mayonnaise

  • 1 cup baby spinach leaves

  • 2-3 tbsp mix of almond slivers, walnuts, and pistochios for garnish

  • 3 tbsp olive oil for brushing


  • Preheat oven to 180 C. Slice french loaf at an angle keeping te slices little thick.
  • Apply Olive oil with pastry brush on both sides of slice.
  • Line a tray with oven proof parchment paper. Arrange slices on them and toast for 5 mins or till slightly crunchy.
  • Remove from oven and assemble the sandwich.
  • Combine sundried tomatoes with mayonnaise. Apply to one side of the slice.
  • Arrange spinach leaves on top and chunks of goat cheese.
  • Place few slices of sundried tomatoes with its oil and again toast them in oven for few minutes.
  • Before serving, drizzle little olive oil and sprinkle nuts if desired on them.
  • Note: Substitute mozzarella cheese with goat cheese if preferred.
