Ingredients

Serves : 3
  • 1 cup oil for deep frying ------------------------------------------------


  • FOR POTATO COVERING:. 1 cup boiled mashed potatoes


  • 1/4 cup each grated Cabot brand cheddar and pepper jack cheeses


  • 1 tbsp Brown & Polson cornflour


  • 1/2 tsp salt or to taste


  • 1/2 tsp cumin seeds


  • 1/2 tsp nigella seeds (kalonji) ------------------------------------------------


  • FOR CHUTNEY STUFFING: 1/4 cup grated coconut


  • 1 big green chili


  • 1/4 cup chopped coriander leaves


  • 2 garlic cloves


  • 1/2 to 1 tsp salt


  • 1 tsp roasted peanuts

Directions

  • Grind all the ingredients mentioned under chutney stuffing with very little water (if required) to get smooth texture of chutney.
  • Mix all ingredients mentioned for potato covering to form a dough.
  • Make 6 equal sized balls of potato dough.
  • Make a small hollow in the potato ball and add a teaspoon of chutney in it. Seal well making sure the chutney doesn't come out of the potato ball. Shape them in oblong fingers.
  • Heat oil in deep thick bottomed pan. Fry the potato fingers in medium hot oil till golden brown in color.
  • Transfer them to a plate covered with paper napkins to drain excess oil.
  • Serve with your choice of dip or condiment.
