Ingredients

  • 8 bread slices For stuffing:

  • 1/2 cup boiled sweet corn kernels

  • 1/3 cup chopped capsicum

  • 1/3 cup chopped onion

  • 1/3 cup chopped processed cheese

  • 2 tbsp grated cheese

  • 1 tbsp tomato ketchup For herbed butter-

  • 1/2 tsp Italian seasoning

  • 1/4 tsp red chilli flakes

    Make herbed butter. For that take ¼ cup butter at room and add ½ tsp Italian seasoning and ¼ tsp red chilli flakes. Mix well and keep aside.

    Next prepare the stuffing. In a mixing bowl add ½ cup boiled sweet corn kernels, 1/3 cup chopped bell peppers, 1/3 cup chopped onions, 1/3 cup chopped processed cheese, 2 tbsp grated processed cheese and 1 tbsp tomato ketchup. No salt needs to be added. Mix everything and refrigerate.

    Shape the bread slices. For that place two bread slices on a chopping board. Use a bowl and cut out roundels from both the slices.

    Keep one roundel aside. This is the base. Place another roundel on the board and use a smaller bowl and cut a smaller roundel. From the second cutting, we will use only the ring, not the roundel. Make sure that the ring is not thin. It should be broad enough.

    Spread herbed butter on the base. Put the ring on it. It now looks like a disc. Fill the disc cavity with approximately 2 tbsp of stuffing.

    Heat a pan or skillet. Remove the ring of the discs. Cook the base on low flame. Cover and cook for 2 minutes and thereafter remove the cover and cook till crisp. Apply butter on the rings. Cook them separately. Place the rings on the cooked base
