Firstly mix the spices for punch phooran mix.
Chop vegetables, powder spice mix (mentioned under ingredients) and almonds (separately), keep aside
Heat the pressure pan on medium flame add oil and heat sufficiently.
Start adding the ingredients, add cumin seeds and mix spices powdered
Add Green chilli slitted n Curry leaves, then add sliced Onions saute till they turns translucent
Next add grated ginger and garlic saute until raw smell disappears.
Then add chopped tomato and Coriander leaves stir continuously
Now sprinkles the spice powders on top like coriander powder, turmeric powder and chilli powder .
Further add chopped vegetables and pulses next add coconut milk over the whole mixture if needed add some water.
Add salt to taste, and the powdered almonds give it to a good mix to combine well.
Close the lid and cook for medium heat for 2 whistles.
Remove from heat and let pressure drop naturally.
Open the pan , garnish with coriander leaves.
Serve hot with parathas, naan, or enjoy with jeera rice.
Instant pot Method
Turn the instant pot to saute mode. add oil and start layering the ingredients as mentioned above
Once all the ingredients have been added. Cancel thw saute button.
Close the lid, adjust to seal then pressure cook on low pressure for 5 mins.
Release pressure and open the pot.
Garnish with coriander leaves serve hot with as u wish.
Make it in a regular pressure cooker, electric cooker or instant pot either way you are in for a lip smacking and mouth watering treat.
