Ingredients

Serves : 4
  • 1) Spice mix (to be powdered) :-


  • 3 Cloves


  • 2 cardamoms


  • 1 tsp bengali panch puran/- spice powder, recipe below


  • 1/2 inch Cinnamon


  • 2 small pieces of mace


  • 2) other ingredients


  • 15 almonds powdered with skin (or use cashews)


  • 2 tbsp oil


  • 1 tsp cumin seeds


  • 1 medium onion sliced


  • 1 green chilli slit into 2 lengthwise


  • 1 tsp Ginger grated


  • 1 tsp garlic Grated


  • 2 small tomatoes finely chopped


  • 1 tbsp coriander powder


  • 1-2 tsp red chilli powder


  • 1/2 tsp Turmeric powder


  • 3 tbsp chopped coriander leaves


  • 1 tsp mint leaves optional


  • 2 cups veggies (Peas, carrot, potato, field Bean's, sprouted moth )


  • 1.1/2 cup coconut milk


  • 1 cup water


  • 1 tsp salt


  • 3). For Punch Phooran Mix


  • 1 tsp Mustard seeds


  • 1 tsp nigella seeds(onion seeds)


  • 1 tsp Cumin seeds


  • 1 tsp fennel seeds


  • 1/2 or 1 tsp fenugreek seeds


  • 2 tsp Freshly chopped coriander leaves for garnish

Directions

  • Firstly mix the spices for punch phooran mix.
  • Chop vegetables, powder spice mix (mentioned under ingredients) and almonds (separately), keep aside
  • Heat the pressure pan on medium flame add oil and heat sufficiently.
  • Start adding the ingredients, add cumin seeds and mix spices powdered
  • Add Green chilli slitted n Curry leaves, then add sliced Onions saute till they turns translucent
  • Next add grated ginger and garlic saute until raw smell disappears.
  • Then add chopped tomato and Coriander leaves stir continuously
  • Now sprinkles the spice powders on top like coriander powder, turmeric powder and chilli powder .
  • Further add chopped vegetables and pulses next add coconut milk over the whole mixture if needed add some water.
  • Add salt to taste, and the powdered almonds give it to a good mix to combine well.
  • Close the lid and cook for medium heat for 2 whistles.
  • Remove from heat and let pressure drop naturally.
  • Open the pan , garnish with coriander leaves.
  • Serve hot with parathas, naan, or enjoy with jeera rice.
  • Instant pot Method
  • Turn the instant pot to saute mode. add oil and start layering the ingredients as mentioned above
  • Once all the ingredients have been added. Cancel thw saute button.
  • Close the lid, adjust to seal then pressure cook on low pressure for 5 mins.
  • Release pressure and open the pot.
  • Garnish with coriander leaves serve hot with as u wish.
  • Make it in a regular pressure cooker, electric cooker or instant pot either way you are in for a lip smacking and mouth watering treat.
