Serves 4
Sabudana / Tapioca / Sago 1 cup
Sugar 3/4 cup
Milk 1/2 litre
Chopped mixed Dry fruits 1 tablespoon
1/4 teaspoon cardamom powder
10-12 saffron strands

In india, Sago Pearls Pudding is also known as Sabudana Kheer or payasam . Mostly prepared on the auspicious occasions of pious Falahar or fasting or vrat . This is most Delicious dessert which can be eaten during vrat, to satisfy sweet cravings . It's very light to digest , filling and easy to make . It can also be served as rich dessert while throwing a party . So let's have a look at its easy peasy recipe ,which is one of my most favourite.
First of all wash sabudana in running water 3 to 4 times.
Add some water and soak sabudana for about 1 to 2 hours
Assemble all the required ingredients
By the time sabudana will be double in size
Heat milk and allow it to boil, when it starts boiling add soak sabudana and keep stirring consistently on low heat . ( otherwise it sticks to bottom and may burn)
Cook sabudana in milk until it is transparent in texture
Add saffron strands and chopped dry fruits to it and keep stirring in between
When sabudana becomes transparent, add sugar and cook for another 5 minutes . sabudana Kheer or Sago pearls pudding is ready
Serve hot or cold...it tastes equally delicious and yummy .
