Ingredients

Serves : 4
  • 1 can pinto beans (or any variety), drained and rinsed under running water


  • 1 zucchini, diced in 1/2" pieces


  • 2 carrots, peeled and diced


  • 1 potato, peeled and diced


  • 1/2 cup quinoa, washed and drained


  • 1 onion chopped finely


  • 3 garlic cloves minced


  • 1/2" ginger minced or grated


  • 1 bay leaf


  • 1/2 tsp turmeric powder


  • 1/2 tsp garam masala powder


  • 1 tsp curry powder


  • 1 tsp red chili powder


  • 1/2 tsp paprika


  • 1 tsp onion powder


  • 1 tsp black pepper powder


  • 1 tsp salt or to taste


  • 1 tsp dried parsley


  • 32 oz veg stock


  • 1/4 cup half & half (or cream)


  • 3 tbsp olive oil

Directions

  • Heat instant pot on saute mode (or pressure cooker). Once it's hot, add oil.
  • Add bay leaf, garlic, ginger, and onions. Saute till onions change color.
  • Add all the vegetables and stir well.
  • Add quinoa and stir well for a minute.
  • Now add all the spices as well as the herbs and mix well.
  • Add the stock, half & half, and salt to taste. Stir well.
  • Put the lid onto the IP and change mode to pressure cook. Pressure cook for 8 minutes (or pressure cook in normal pressure cooker for 1-2 whistles).
  • Once buzzer goes off, release pressure and open the lid.
  • Laddle the stew in serving bowls with dash of dried parsley and paprika.
