In a large pan heat the olive oil, over low heat.
Add onions and saute for 5 mins,
Add minced garlic, and Curry powder saute for 2 mins on low flame. this will help release the aromas in the spices.
Next add the Coriander leaves, steamed mix sprouts and coconut milk bring to gentle simmer,and cook for 10 mins.
Lastly add the lemon juice and methi leaves.
Then cook for 1 minute or more until the methi leaves are lightly wilted..
Taste, season with salt and black pepper . Serve warm.
