1 cup- grated cauliflower
1cup- whole wheat flour
1 cup-Arhar dal
1 tsp- turmeric powder
1 tsp- red chilli powder
1 tsp-chopped green chilli and ginger
1- onion chopped
2 tsp-chopped coriander leaves
2 tsp-cumin seed
Salt-1 tsp or as required
In a bowl take whole wheat flour. Add a pinch of salt and knead a soft dough with sufficient water. Cover and keep aside.
Wash cauliflower and grate it .heat 1 tsp ghee in a pan. Add 1 tsp cumin seed. When its crackled add chopped green chilli,ginger and onion. Saute for a minute. Add grated cauliflower and cook. Add 1/2 tsp salt,1/2 tsp turmeric powder,1/2 tsp red chilli powder and mix everything well. Cook for a minute or till moisture evaporates from the cauliflower. Add coriander leaves and remove from heat. Keep it in a plate for cool down.
Take kneaded flour and make balls. Make round shape poori from the ball.
Fill 2 tsp of cauliflower mixture in the centre of the poori.
Fold carefully and make guzia shape.
Give a design according to your choice. Keep it in a plate and cover with muslin cloth.
Wash arhar dal with water. Cook dal along with 1 tsp salt and 1/2 tsp turmeric powder and 3 cup of water in the pressure cooker .cook for 3-4 whistle. Remove from heat. After releasing the steam open the lid and check. If the dal is thick consistency then add some more water. Keep it on flame and add prepared guzia. Boil it for 5-10 minutes after adding guzia. Once it cook remove from heat.
Heat remaining ghee in a tadka pan. Add hing and 1 tsp cumin seeds. When its crackled add 1/2 tsp red chilli powder. Add tadka on dal guzia. Serve hot garnish with chopped coriander leaves.
