1.Firstly take green gram one cup and rice 2 cups.
Grind it to a flour like texture of atta.
Generally we make in more quantity so we usually do grinding in nearby flour mill for perfect texture of this flour.
Now heat an iron wok,add 3tsp oil and add cuminseeds,mustardseeds,uraddal one by one and keep sauteing.
Now add curryleaves,green and red chillies.Saute again
Now add chopped onion and fry till it changes its colour.
Now add 1cup water to it
Keep boiling and add salt to taste.
Let it boil very well.check the taste.salt taste should be little more.
Now add 1 cup flour little by little and keep mixing with a tall spatula (initially not in circular motion rather mix it straight from front to back and viceversa)
The absorption of flour sometimes depends on its texture.sometimes water may absorb less flour and sometimes more flour than the quantity mentioned.(it varies on green gram and rice used )
So once flour mixes well and doesnt stick fingers,we can stop adding flour.
Now mix everything well and add 3tsp oil over it.sometimes oil quantity also may vary.
Close the lid and cook in lower flame for 5minutes or till rawness goes away.
Open lid after few minutes mix well and check.
If required add some more oil at this stage and keep cooking in low flame.
Fry it for few mins after removing lid completely.
Upindi should be in the texture as shown in the picture of this step.
Serve it hot alongwith raw onions,pickle and curd.These are the best combo to enjoy our Authentic recipe usually served as breakfast.
