Ingredients

Serves : 3
  • 1 cup arhar dal


  • 1 diced carrot


  • 1 diced onion


  • 8 french beans chopped


  • 1/5 chopped cabbage


  • 4 garlic cloves


  • 1.5 tsp salt


  • 3/4 tsp turmeric powder


  • For Tadka 2 tsp oil


  • 10 curry leaves


  • 2 red chillies


  • 3 chopped tomatoes


  • 1 tsp Kashmiri chilli powder


  • 2 Tsp Curry masala


  • 1 tsp mustard seeds


  • 2 tsp lemon juice


  • 1 tsp chopped coriander for garnishing

Directions

  • Wash n soak arhar dal for 20 minutes.
  • Now in a pressure cooker, transfer all the washed and chopped vegetables, soaked arhar dal, salt and turmeric powder, pour water, close the lid . Cook it till 8 whistles come.
  • For preparing tadka, in a pan heat oil, add mustard seeds, curry leaves, red chillies then add chopped tomatoes and all spices. Cover it n cook on low flame for 10 mins.
  • Open the cooker lid , once vegetable and dal are properly cooked , transfer prepared tadka in it and mix them properly . Cook again for few minutes, if it is too thick add water ( consistency should neither too thin nor too thick).
  • Mix lemon juice and garnish it with coriander leaves (a tempering of desi ghee, hing, chilli powder can also be added optional), now Vegetable Dal Curry is ready to relish, serve it with rice or chapati.
