Wash and soak pink masoor dal for 30 minutes
Grind it into paste using min of water Grind ginger n garlic with green chilies into a paste
Chop onions finely
Heat 2 tablespoon oil in a heavy bottom pan. Add cumin seeds and asafetida.
Add chopped onion and fry till onion turn golden brown in color. Add ginger garlic paste Keep stirring
Now add the masoor dal paste in the pan, roast over low heat stirring continuously till it turns light brown in colour.
Add salt, red chili powder and amchoor powder and mix well Add chopped Coriander leaves
Dal is ready when it leaves sides of the pan and all the moisture is evaporated. Let the mixture cool down little bit.
Grease a large plate with little oil Evenly spread the dal mixture in the plate with 1/4 inch thickness.
Let the mixture set in the fridge for 1-2 hours Once mixture is nicely set, cut into equal shape squares.

I have pan fried them one can shallow fry or deep fry too Let the cutlets be crispy & brown from both the side
Serve Masoor Dal Cutlet warm with green chutney.
