Ingredients

Serves : 3
  • 5-6 medium sized potatoes 1/2 cup crumbled paneer 2 large onion 1 tsp ginger garlic paste 2 medium sized tomato ( puree) 1/2 tsp turmeric powder 1/2 red chilli powder 1/2 coriander powder 1.tsp garam masala powder 1/2 tsp jeera powder 1 tbsp cashews (make paste) 2.small bay leaf chopped coriander leaves 2 tbsp fresh malai or cream oil as needed 2 tbsp desi ghee 1 tsp kasuri methi salt to taste

Directions

  • Peel and wash the potatoes.Cut into halves. Then sckretch the middle part with spoon or knife.
  • Now heat the oil (mix with desi ghee) place the potatoes (into batches)and fry these from both sides until light golden brown.Take out in a plate.
  • In another pan add 1tsp oil. Add paneer,pinch turmeric, chilli powder,salt and jeera powder.Mix well.Roast it 2-3 minutes on low heat. Then take out in a bowl.Let it cool.
  • Take the fried potatoes and keep the paneer filling in the centre. Keep aside.
  • Now take the same pan or vok in which we fried the potatoes. Heat sufficient oil and add onion paste,roast it then add ginger garlic paste and bay leaf. Keep stirring until it gets light.golden. Now add spices with adding little water. Keep stirring.
  • Now add tomato puree and salt.. Mix well and roast until it leaves oil.Now add cashew paste and fresh malai. Stir constantly. Now.Add water per your required consistency.
  • Cook on low flame.add some garam masala and kasuri methi. Cook 2 minutes more. Then switch off the flame.
  • Before serving transfer the gravy.into serving bowl then place stuffed paneer potatoes.. eggs in it carefully. Garnish with coriander leaves.
