  • 1/2 cup-rice

  • 1/2 cup-arhar dal

  • 1-baigan(eggplant)

  • 1-cucumber(peeled and make thin strips)

  • 1-cherry tomato

  • 1 tbsp-oil

  • 1 tbsp-ghee

  • 1 tsp-Pudina leaves for garnishing

  • 1 tsp-cumin seed

  • 1 tsp-turmaric powder

  • 1 tsp-red chilli powder

  • 1 tsp-salt or to taste

  • 1/2 tsp- hing

    Wash rice2-3 times with water. Cook in a pan with sufficient water. and keep aside.

    Wash arhar dal with water and cook in pressure cooker along with salt and 1/2 tsp turmeric powder. Add 1 cup of water. After 2-3 whistle off the flame. After releasing the steam open the lid and stir cooked dal very well. Heat ghee in a tadka pan. Add hing and cumin seeds. When it's crackled add 1/2 tsp red chilli powder and add this tadka in cooked dal.

    Now wash baigan and cut into 1/2 inch thick slices in round shape. In a plate take 1/2 tsp salt,1/2 tsp turmeric powder and 1/2 tsp red chilli powder and mix. Marinade baigan in this mixture .

    Heat 2 tsp oil in a pan. Stir fry all marinated eggplant from both the sides. Remove from heat and keep it in plate. Serve hot baigan bhaja with dal-chawal garnish with cherry tomato,cucumber strip and pudina leaves.
