Take some water in a deep pan,add little oil and salt to it.Once it comes to boil add the noodles and cook until they are soft enough.Just keep a close eye so that they don't get over cooked.
Drain the water,wash the noodles with cold water.This will prevent it from getting overcooked by cutting off the heat. Add few drops of oil to the cooked noodle and give a toss as that will prevent it from sticking together.
Cut your favourite veggies ,I used carrots,bell pepper,beans,onions,potatoes(optional).
Add some vegetable oil in a wok and add all the veggies once the oil heats up.Cooking noodles needs a little more oil otherwise it turns out dry.
Stir fry the veggies,adjust the seasonings with some salt and pepper.Remember that the noodles were cooked in salted water so adjust accordingly.
Crush 1-2 garlic cloves, and add them to the cooked veggies just when you see they are cooked.I love the smell of the raw garlic in the noodles.It really brings out a good taste.Stir for a minute or 2 on high flame.
Add the noodles to the Fried veggies.
Make a sauce mixture,using some chilli tomato ketchup,schezwan sauce(optional),soy sauce and a little vinegar and add it to the noodles.
Toss them for sometime on high flame.
Serve it with some scrambled eggs/poached eggs/sunny side up.
You may add some prawns,chicken chunks too to the cooked veggies.👌👌👌👌
