Ingredients

  • 3 tsp oil/ ghee 1 bay leaf 1 star anise 2 cloves 1 inch cinnamon sticks 1 tsp cumin seeds 1 onion, finely chopped 1 tsp ginger garlic paste ½ tsp garam masala 1 tomato, finely chopped ¼ tsp turmeric 1 tsp kashmiri red chilli powder ½ tsp coriander powder 1 tsp chole/chana masala powder 1 tsp kasuri methi / dry fenugreek leaves 2 tbsp coriander leaves 2 tbsp mint leaves 1 tsp salt 2 cup water 1 cup chickpea / chana, soaked 8 hours or overnight and boiled 10 minutes 1 cup basmati rice, soaked 20 minutes

Directions

  • In a pressure cooker heat oil and saute bay leaf, star anise, cloves, cinnamon and jeera till it turns aromatic. Saute onion till golden brown, then add ginger garlic paste and saute few seconds then add chopped tomatoes and saute few minutes. Then add turmeric powder, chilli powder, coriander powder, chana masala powder, garam masala, kasuri methi and salt. saute well. Now add soaked and boiled chickpea mint and coriander leaves and saute for a minute. Then add basmati rice (soaked for 20 minutes) and saute gently. now add 2 cup water and stir well. cover and pressure cook for 1 whistles. Finally, garnish with coriander and serve chana pulao along with any raita or any veg or non veg curry.
