Ingredients
Serves 4
300 gram white chickpeas
2 onions
5..6 garlic cloves
1 inch ginger
3 tomatoes
2 green chillies
1 tsp tamarind paste
2 cloves
3..4 black peppercorns
1 harad
1 bay leaf
1.5 tsp salt
1/2 tsp garam masala powder
1tsp red chilli powder
2 tsp ghee
1 tsp cumin seeds
1/4 tsp heeng
500 gram refined flour
1/2 cup curd
1/2 tsp black salt
500 ml oil to deep fry bhature
Directions
Wash and soak chickpeas for atleast 6 hours
Then boil adding 1 tsp salt till soft
Meanwhile sieve flour in a plate ,add salt and curd and knead a soft dough by water
Keep covered for 2 hours
For masala of chickpeas heat ghee in a pan
Add heeng and cumin seeds
Add finely chopped onions and grinded garlic paste and fry well
Add chopped tomatoes, ginger and green chillies
Fry well till tomatoes are soft
Add all freshly ground whole spices ,red chilli powder and garam masala powder
Add this masala mixture in boiled chickpeas
Add tamarind paste
Cook for slow flame for 10 minutes
Turn off the flame
Now make a ball like LOI of flour dough
Roll it by rolling pin like chapati and deep fry from both sides
Serve hot with chole
