Ingredients

Serves : 5
  • 1 cup aloo cut in cubes


  • 1 cup carrot cut in cubes


  • 1 cup beans cut in cubes


  • 3 onions cut in vertical sling


  • 2 tbsp salt


  • 2 tbsp red chilly powder


  • 2 tbsp biriyani masala


  • 3 green chilly


  • 4 cups of basmati rice


  • 8 cups water


  • 1 bunch coriander finely chopped


  • 4 tbsp oil


  • 2 tbsp garam masala


  • 1 tbsp whole spices


  • 3 tomatoes cut in vertical sling


  • 1 cup barista(fried onion)


  • 1 tbsp kaju fried in ghee

Directions

  • In a pan add oil after it get heated add whole spices and fry them later add green chilly onions and tomato
  • Saute them till onions turn translucent and tomatoes to mushy
  • Later add all vegetables aloo, carrot, beans you can add vegetables according to your taste such as capsicum, cauliflower some of them add paneer but since it is veg pulao but not paneer i will avoid that
  • Saute them and fry till 2min now add all seasoning
  • That is add salt, red chilly powder, biriyani masala, garam masala, turmeric powder, jeera powder, dhaniya powder and mix well
  • Fry till all masala get well mix with vegetables
  • Meanwhile take basmati rice wash 2 times and soak for 20min
  • Now take this rice without water and add to the vegetable mixture and saute for a min by adding ghee
  • After a min transfer the whole mixture to a pressure cooker and add 8 cups of water (1:2ratio for rice 1 cup rice 2 cups water)
  • Cook till three whistles and later turn off the flame
  • After cooker releases all pressure transfer to a serving plate add barista, fried kaaju, coriander and serve hot
