Add curd and semolina together. Whisk properly. Add around 1 cup of water and blend well. Add salt turmeric powder red chilli powder and coriander leaves and blend well. Keep the mixture for 10 minutes. After 10 minutes add some water as the semolina absorbs water. Add eno and blend well.
Heat oil in a non stick tawa or kadhai. Crackle mustard seeds and add hing. Add the suji mixture and spread in a circular shape
On the upper moist layer add tomatoes. Later add capsicum rings followed by carrots.
Add chopped onions. Cook until semolina changes colour. Flip and cook for 3 minutes on slow gas until veggies change colour.
Add oregano. Sprinkle salt and red chilli powder and chat masala.
Add tomato sauce so as to cover the veggies. Again add some cheese and cook covered till cheese melts. Remove from heat and slice with a cutter. Serve with tomato sauce.
