  • INGREDIENTS FOR OMELETTE PIZZA: 1 egg


  • 2 egg whites


  • Salt as per taste


  • 1/2 tsp Pepper few olives 1 medium tomato sliced properly


  • 3 to 4 Mushrooms sliced 1 green chilli


  • 1 Cheese slice


  • half a red onion diced Fresh corainder leaves


  • INGREDIENTS FOR CHIA PLUM PUDDING:


  • 6 Dates pitted and quartered


  • 1 Tablespoon vanilla extract


  • 1 plum


  • 1 tbsp honey


  • 8 Tablespoons chia seeds

Directions

  • Firstly for the pizza omelette:Fry the onion and mushrooms in a pan with 1 tsp oil until cooked. Beat the egg whites in an electric mixer until frothy, now add the yolks and mix gently , season with salt and pepper. Pour this mixture over to a microwave safe pan , top with the mushrooms , tomatoes, onions , green chillies and cheese over the top. also add some olives .Cook for 5 mins on a microwave, until the cheese melted and bubbling.
  • Serve immediately garnish with the corainder leaves and enjoy with toast.
  • Chia Plum smoothie :Place the dates, milk and vanilla extract in a blender and blend. Starting on low and increasing to high speed until the mixture is completely smooth.Add cut plum pieces .Blend on low just to combine.Stir in the chia seeds with a spatula.Pour the chia pudding into prepared containers. Top the the pudding with freshly cut plum pieces. Refrigerate 6 hours for the chia seeds to thicken the pudding.Its so healthy enough for your breakfast.
