Ingredients

Serves : 4
  • For Bengali Style Luchi- 1 cup plain flour,1tbsp ghee, salt to taste,oil for frying,water as required


  • For Aloo Phool Kopir Dalna- Cauliflower-500gms, potato-4 , cinamon- 1 piece, cloves-3, bay leaf-1, cumin seeds-1 tsp, chilli powder-1/2 tsp, green chilli-2, cumin powder-1tsp, ginger paste-1tsp,turmeric powder-1/2tsp, salt to taste, sugar-1/2 tsp,mustard oil-1tbsp


  • For Sattu Barfi- 1cup Sattu, 1/2 cup sugar, 3/4tbsp desi ghee, 1/2cup chopped nuts, water as required.

Directions

  • For Luchi- Combine all the ingredients in a deep bowl &.knead into a soft dough using enough warm water.
  • Devide the dough into 10 equal portions.
  • Roll a portion of the dough into the shape of a small circle.
  • Heat oil in a deep nonstick kadai & deep fry the luchies on medium flame till it puffs up & turns brown in colour from both sides.
  • Drain in an absorbent paper.Serve immediately with Aloo, Phulkopir Dalna or potato ,cauliflower curry.
  • For Aloo,Phulkopir Dalna- Clean & break cauliflower into small florets.Peel & cut the potatoes into cubes.
  • Heat mustard oil in a kadai & add cumin seeds,bay leaf, cinnamon & cloves.Then add potatoes ,stir fry for.5 mints.Add cauliflower & stir fry.
  • Add green chilli,ginger paste,cumin powder,chilli powder,turmeric powder ,salt to taste.& 1/2 tsp sugar.Add 1 cup water & mix well.,
  • Cover & cook till the potatoes ,cauliflowers are parboiled.Turn off the flame.
  • Serve warm with luchies.
  • For Sattu Barfy- Greased a plate with little ghee.Add Sattu, ghee in a pan & roast them in low flame till raw smell goes off.Roast for 4-5mints.
  • Heat sugar with little water in a heavy bottom pan.Then remove it from the stove & add sugar syrup in Sattu & keep on stirring.
  • Now pour the mixture in greased plate & set level with the help of spatula.
  • Keep it aside for 1-2 hour for set the Barfi.After it gets cool down cut them & give Barfi shape.
