Ingredients

  • 1 cup quinoa


  • 1/2 cup samolina


  • 1/2 cup curd


  • 2 tsp or as taste salt


  • 1 cup tomatoes chopped


  • 1 cup onion chopped


  • 3 tsp coriander


  • 1/2 cup capsicum chopped


  • 2 green chillies


  • 1/2 cup carrot grated


  • 1 cup oil for shallow frying

Directions

  • Soak quinoa in enough water for 1 hr and then grind it to a paste using mixer jar.
  • Mix samolina, salt and curd to it. Add required amount of water to make batter of uttapa.
  • Place the tawa on flame. Spread the batter, sprinkle some chopped onions, tomatoes, capsicum, green chillies, coriander and carrots.
  • Let it get cooked properly from both the sides.
  • Serve uttapa with coconut chutney. It looks colourful and taste best. It's healthy as loaded with vegetables.
