Ingredients

  • Uttapam batter ingredients:


  • 3 cup dosa rice


  • 1/2 tsp methi/Fenugreek seeds


  • 1 cup urad dal


  • 2 cup flatten rice ( washed & squeezed)


  • 1 tbsp salt


  • 2 tbsp oil for roasting


  • 1 large sized capsicum (for making capsicum rings)


  • Peanut chutney ingredients:


  • Peanuts-1/2 cup


  • Oil- 1/2 tsp


  • Garlic -3 cloves


  • 1 onion


  • 4 Dry red chillies


  • 1/4 tsp Tarmarind paste


  • Salt


  • For seasoning:


  • Oil -1 tsp


  • 1 tsp mustard seeds


  • 1/4 tsp urad dal


  • 1Curry leaves -a sprig


  • Red chilli-1

Directions

  • Firstly, in a large bowl soak 3 cup dosa rice and 1/2 tsp methi and 1 cup urad dal for 5 hours. Drain off the water, make smooth paste adding washed and squeezed flattened rice, use water as required. Transfer the smooth and fluffy batter into a large bowl, mix well making sure everything is combined together. Now cover and rest in a warm place for 8 -10 hours or till the batter ferments and doubles, add salt to the batter and mix gently, Uttapam batter is ready now.
  • Let's proceed for making of capsicum Uttapam rings:
  • Cut capsicum rings and heat the tawa , spread little oil in a dosa pan, place a capsicum ring and sprinkle few mustard seeds on that rings, pour little Uttapam batter on the placed capsicum ring and sprinkle some oil on sides. Cook them on both sides, till cooked properly.
  • For peanut chutney: roast peanuts on medium heat. Once it cools . Remove the skin and keep it aside. Heat 1/2 tsp oil, roast onion and garlic until light golden brown and remove. Saute red chillies also in the same oil. Grind roasted peanuts along with garlic, onion, red chillies, tamarind and salt needed. Add needed water and grind it to a smooth paste.
  • Heat a tsp of oil in a pan, add mustard seeds, when it sputters add red chilli, curry leaves and pour it over the chutney .
