Grind red chillies, shallots, garlic to fine paste.
In a heated pan, add oil, then the ground paste. Fry the paste on low heat till it cooks approximately 2 minutes.
Mean while soak the tamarind and extract the bulb by bringing to 2 cups.
When the paste gets cooked, add the tamarind extract, sugar and salt.
Bring to boil, add vercimelli and close with a lid
Stir in between. After 4 minutes add tofu, bean sprouts and chives, stir and Cook for couple of minutes and remove from heat.
Garnish with fried shallots.
