Ingredients
Serves 4
Tofu Scramble- 1.5 cup Tofu (soft) (1/2
1 tablespoon Olive oil
1-2 diced Onion
2 cloves Garlic
1 cup diced Red bell pepper
1-2 cups Spinach
to taste Salt
1/4 tsp Turmeric powder
Dal Blini Ingredients--Leftover Sambhar/ Any dal
1/2 cup Gram flour
1/2 cup Rice flour
1/2 cup wheat flour
1-2 Green chillies
1 pinch Asafoetida
to taste Salt
Oil 1 tbsp to add in batter
Oil to shallow fry (can be deep fried also)
Directions
Tofu Scramble- Crumble tofu into ½ “pieces onto the paper towels so that excess water came out of it.
Press gently before cooking if needed to drain if water present.
Heat oil in a pan over medium heat, add garlic and onion. Saute for 30 seconds.
Add the bell pepper and sauté for about 2 minutes. Add the spinach and sauté until wilted, 2 minutes.
Add in drained tofu, salt and turmeric. Combine well
Cook and stir until tofu is hot and evenly mixed in the seasoning.
Adjust the seasoning if required. Have it with any naan, Blini, Indian Bread or Tortilla.
Dal Ki Blini- In a bowl add all the ingredients and mix well together.
Add appropriate amount of water if necessary to make the batter like we use to make for dosa.
Splash a little oil on a griddle and spread 1 ladle of the batter. Cook it till golden in color.
Flip it and add 2-3 drops of oil at the sides.
Serve with any sauce or as you like. I am having it with Tofu scramble.
