Ingredients

Serves : 2
  • 1 cup sweet corns


  • 1 cup semolina


  • 1cup curd


  • 1tsp baking soda


  • 1tsp salt


  • 2tsp ginger green chilli paste


  • 1tsp turmeric powder


  • 1tsp red pepper powder


  • 3 tsp oil


  • 8 to 10 curry leaves


  • 1/2tsp mustard seeds


  • 2 tsp sugar


  • 2tsp lemon juice


  • For soup 200 gram bottle guard


  • 1 cup amaranth leaves


  • 8 to 10 mint leaves


  • 1tsp ginger green chilli paste


  • 1tsp salt for soup


  • 1tsp black pepper powder


  • 1tsp lime juice

Directions

  • Grinded corn kernels coarsely
  • Add semolina and curd in it
  • Add some water if needed to make a smooth thick batter
  • Add ginger green chilli paste
  • Add salt , pepper powder,sugar,lemon juice and turmeric powder and mix well
  • Add baking soda
  • Grease the muffin moulds and pour the batter in them
  • Now steam in steamer or may bake in oven at 180 degree for 15 minutes
  • After 15 minutes muffins are steamed or baked and ready
  • Pour tadka by heating oil and adding mustard seeds and curry leaves
  • When muffins are cooming meanwhile make soup
  • Boil amaranth leaves and bottleguard for 5 minutes
  • Grind when cool down along with mint leaves
  • Now heat 1tsp oil in a pan
  • Add ginger green chilli paste to fry
  • Add grinded veggies and 1cup water
  • Add salt and pepper powder
  • Take a boil and turn off the flame
  • Add lime juice and serve hot
