Ingredients for making basil & sun-dried pesto:-1
1 cup fresh basil leaves
1/2 cup chopped sun-dried tomatoes
1/8 cup parmesan cheese
2 tbsp chopped almonds
1/4 cup olive oil or as required
2-3 garlic cloves
to taste Salt/1 tsp
Ingredients for making caprese sandwich:-1
1 cereal sandwich bread
1/2 cup basil & sundried pesto
8-10 fresh mozzarella slices
2 riped tomatoes
2 tbsp blasmic vinegar
Steps for preparing basil & sun-dried pesto:-
In a mixer jar add 1 cup of washed basil leaves,1/8 cup of parmesan cheese, 2tbsp of chopped almonds,2 tsp of garlic cloves blend for 2-3 minutes.
Scrape the sides of the jar add 1/2 cup chopped sun-dried tomatoes, salt to taste, and 1/4cup olive oil, blend all the ingredients once again.
Scrape the sides of jar on regularly intervals and blend until you get the desired consistency.
If you feel it is difficult to blend, add 1-2 tbsp more of olive oil and blend again.
Remove pesto in a clean glass jar and keep aside.
Steps for assembling sandwich:-
Slice tomatoes into thick slices, place them in bowl, pour 2tbsp blasmic vinegar over them and keep aside.
Place 1 piece of cereal bread on the chopping board then apply pesto onto a slice of bread. Then layer the cereal bread with 2 pieces of fresh mozzarella cheese and 2 pieces of sliced tomatoes.
Then cover it with another piece of cereal bread.Same way assemble all the sandwiches.
Preheat the grill pan over medium heat.
Once the pan is hot apply olive oil on the grill pan.Then place the assembled sandwich.
Now grill the sandwich for 2-3 minutes, until it's golden brown in colour and the cheese is melted.
Gently with the help of a spatula flip the sandwich to other side.Drizzle some more olive oil on pan if required and grill again for 2-3 minutes.
Once the sandwich is done remove it from the pan.Let it cool down a bit.
