Making Dhokla :-
In a large bowl combine the salt, yogurt and besan.
Whisk together along with water to make a thick batter.
Add lemon juice and Eno fruit salt . Whisk well to combine.
Preheat the steamer by with 2-3 cups water at its bottom.
Grease the dhokla plate with oil
Pour the Dhokla batter into each plate. Fill all plates only up to half its level.
Place the plates in steamer and steam for about 12 to 15 minutes on high heat with the lid covered.
After 10-to 15 minutes check it by insert a clean knife into the centre of steamed dhokla. When it comes out clean that means it is cooked .
Turn off the heat and allow it to rest for 2-3 minutes in steamer.
Take out the dhokla plates from the steamer and allow it to cool completely.
Cut them into desired shapes. Arrange them on a serving platter.
Making Rasa :-
In a pan heat oil on medium flame.
Add mustard seeds, curry leaves, hing and green chillies.
Once it splutter add red chilli powder, lemon juice and salt.
Add water as required and make a thin sauce .Bring to boil. Rasa is ready.
At serving time pour rasa on dhokla and garnish with some coconut on top.
Making green chutney :-
In a grinder add green coriander, mint leaves, chopped chillies and salt...
Grind it in a semi liquid paste.
Serve it with Rasa and dhokla..
