Ingredients

Serves : 5
  • For Dhokla:- 2 cups gram flour (besan)


  • 1/2 cup curd (dahi)


  • 2 green chillies


  • 1 tsp lemon juice


  • 1 tsp Eno fruit salt


  • 1 tsp salt or according to taste


  • For the Rasa:- 1tbsp cooking oil


  • 1 tsp mustard seeds


  • 1/2 tsp asafoetida (hing)


  • 5-6 curry leaves


  • 2 green chillies


  • 1 tsp red chilli powder


  • 2 tbsp sugar


  • 1/2 tsp salt or to taste


  • 2 tbsp lemon juice


  • 2 cup water


  • For garnish:- 2tbsp grated coconut


  • For Combo green chutney :- 2 cup coriander leaves


  • 1/2 cup mint leaves


  • 2 green chillies 1/2 tsp lemon juice


  • 1/4 tsp salt

Directions

  • Making Dhokla :-
  • In a large bowl combine the salt, yogurt and besan.
  • Whisk together along with water to make a thick batter.
  • Add lemon juice and Eno fruit salt . Whisk well to combine.
  • Preheat the steamer by with 2-3 cups water at its bottom.
  • Grease the dhokla plate with oil
  • Pour the Dhokla batter into each plate. Fill all plates only up to half its level.
  • Place the plates in steamer and steam for about 12 to 15 minutes on high heat with the lid covered.
  • After 10-to 15 minutes check it by insert a clean knife into the centre of steamed dhokla. When it comes out clean that means it is cooked .
  • Turn off the heat and allow it to rest for 2-3 minutes in steamer.
  • Take out the dhokla plates from the steamer and allow it to cool completely.
  • Cut them into desired shapes. Arrange them on a serving platter.
  • Making Rasa :-
  • In a pan heat oil on medium flame.
  • Add mustard seeds, curry leaves, hing and green chillies.
  • Once it splutter add red chilli powder, lemon juice and salt.
  • Add water as required and make a thin sauce .Bring to boil. Rasa is ready.
  • At serving time pour rasa on dhokla and garnish with some coconut on top.
  • Making green chutney :-
  • In a grinder add green coriander, mint leaves, chopped chillies and salt...
  • Grind it in a semi liquid paste.
  • Serve it with Rasa and dhokla..
