1)Method for stuffing:-
Heat Oil in a kadai add chopped onions, chopped capsicum, and chopped carrot, chopped dry fruits and nuts... (you can also add other chopped veggies if you like)
Then add boiled Quinoa then add all the spices mentioned for stuffing n then saute it for 5 minutes then add chopped coriander leaves.
Cover it n let it cook for 2 minutes.
Then transfer it to a bowl and keep it aside.
2) Method for Mushroom balls :-
Take a mixing bowl add roasted chickpea flour then add all the ingredients mentioned for mushroom balls and then add little water and make thick paste.
Now take the steamed mushrooms with removed stems and stuff the quinoa mixture in mushrooms cavity, then carefully dip it completely in chickpea flour (Besan) paste.
Grease oil in the Appe pan and make mushroom appe balls, cook it on both sides.
It is ready to serve.
Serve it with cashew nut dip and tomato sauce.
Method for cashew nut dip :-
Take a mixing jar add Soaked cashew nuts - 1/2 cup and roasted watermelon seeds - 1 spoon, lemon juice - 1tsp, black salt - as required, and pink salt(Rock salt) - as required, onion paste - 1 tsp, garlic powder - 1/4 tsp,mint leaves and then blend them all into a fine paste.
The cashew nut dip is ready.
NOTE- You can also bake the mushroom balls. And you can also prepare the Quinoa mixture before hand for stuffing.
