Ingredients

Serves : 4
  • 1) Ingredients for stuffing :-


  • Boiled Quinoa - 1 cup


  • Chopped Capsicum - 1/4 cup


  • chopped carrot-1/4 cup


  • chopped onions-2 nos.


  • Peri Peri - 1 tsp


  • garlic powder-1 tsp (1/2 for stuffing n other half for mushroom balls)


  • salt to taste (2tsp)/as required (1 tsp for stuffing n other 1 tsp for mushroom balls)


  • chaat masala-1 tsp


  • chopped coriander leaves - 2 tsp


  • sugar-1 pinch


  • Chilli flakes- 1/2 tsp


  • chopped dry fruit and nuts (cashew nuts and raisins) - 2 spoon /as required


  • Black pepper powder-1 tsp


  • Oil - 2 tsp


  • 2)Ingredients for Mushroom balls :-


  • button mushrooms (big size) - 12-15 nos. (well washed and steamed for 5-6 minutes)


  • Roasted chickpea flour (Besan) - 1/2 cup


  • Fresh curd-1/2 cup


  • Cumin powder - 1/2 tsp


  • coriander powder-1 tsp


  • Ginger powder-1/4 tsp


  • onion paste-1 tsp


  • dry mango powder-1 tsp


  • chilli powder-1 tsp


  • turmeric powder-1/2 tsp


  • garam masala powder-1/2 tsp

Directions

  • 1)Method for stuffing:-
  • Heat Oil in a kadai add chopped onions, chopped capsicum, and chopped carrot, chopped dry fruits and nuts... (you can also add other chopped veggies if you like)
  • Then add boiled Quinoa then add all the spices mentioned for stuffing n then saute it for 5 minutes then add chopped coriander leaves.
  • Cover it n let it cook for 2 minutes.
  • Then transfer it to a bowl and keep it aside.
  • 2) Method for Mushroom balls :-
  • Take a mixing bowl add roasted chickpea flour then add all the ingredients mentioned for mushroom balls and then add little water and make thick paste.
  • Now take the steamed mushrooms with removed stems and stuff the quinoa mixture in mushrooms cavity, then carefully dip it completely in chickpea flour (Besan) paste.
  • Grease oil in the Appe pan and make mushroom appe balls, cook it on both sides.
  • It is ready to serve.
  • Serve it with cashew nut dip and tomato sauce.
  • Method for cashew nut dip :-
  • Take a mixing jar add Soaked cashew nuts - 1/2 cup and roasted watermelon seeds - 1 spoon, lemon juice - 1tsp, black salt - as required, and pink salt(Rock salt) - as required, onion paste - 1 tsp, garlic powder - 1/4 tsp,mint leaves and then blend them all into a fine paste.
  • The cashew nut dip is ready.
  • NOTE- You can also bake the mushroom balls. And you can also prepare the Quinoa mixture before hand for stuffing.
