Ingredients

Serves 3

  • For noodles dough , Wheat 1 1/2 cup

  • Ghee / oil - 3tspn

  • Water - about 1cup

  • Egg white -1 no.

  • For mixing with noodles we need, onion - 1 medium

  • Capsicum - 1/2 cup chopped

  • Carrot grated - 1/2 cuo

  • Cabbage chopped -1/2 cup

  • Cucumber sliced - 1/2 cup

  • Green chilli - 3 sliced

  • Lemon - 1/2 no.

  • Curry leaves - 2 strings

  • Soya sauce - 1tspn

  • Tomato sauce - 1 tspn

  • Pepper powder - 1 tspn

  • Oil - 3 to 5 tblsn

Directions

    Add salt and oil to wheat flour and mix well. Add water a little at a time to make a dough. Knead dough and form into a ball.

    Let dough rest for 10-15 minutes in a bowl cover it

    Once you are able to handle the dough by hand, knead it nicely for 1-2 mins.

    Here I used Idiyappam press for making Noodles. Grease the inside portion of the idiyappam press.

    Grease your palm with oil, take a portion of the dough, smoothen it out in your palm and fill it in the press

    Heat enough (1 litre of) water in a big vessel and add salt and ghee

  • 07

    When the water boils well, gently press the dough on top

  • 08

    Stir and allow it to cook

    When it cooked well, transfer it into the strainer and pour the cold water.

    In a big non stick pan, add oil

    When oil becomes hot add all the veggies one by one and saute well. Keep 2 tblspn of all veggies for garnishing

    After that add salt and sauces. Then mix well

  • 13

    When all are well combined, add drained noodles and mix well

  • 14

    Finally add pepper powder curry leaves

  • 15

    Add half cup water if needed ( if the noodles are dry ) squeeze lemon and mix well

    Veg wheat noodles ready. Serve with boiled egg and enjoyy!!!
