Wash and soak rice,urad dal and poha for six hours
Grind it into a smooth paste
Set aside for fermentation for 6-7 hours
After the batter had fermented add salt and stir well
Now the batter is ready for making aapams
Heat an aapam pan and start making aapams by pouring the batter at the center and rotating it slightly for even spreading of it
Cover it with a lid for few seconds. We can see the aapam getting cooked which looks soft at the center and crispy at the sides.
There is no requirement to flip the aapam the other side,since it gets cooked well by closing the lid
Take the aapam from the pan using dosa ladle or any flat ladle.
FOR COCONUT MILK: Take 2 cups of coconut,either shredded or cut into small pieces.
Wash it well and grind it with water
Extract the first thick coconut milk using a strainer
Take the grounded coconut and grind again using water,followed by extracting thin coconut milk.Mix both well and add required sugar for sweetness with little amount of elaichi for flavour.
Place the cooked aapams in a plate and pour the extracted coconut milk over it evenly, so that the aapams get soaked in it well.
