2-3 cups idli batter
1 cup chopped mixed veggies (I used frozen ones)
2 tbsp. grated beetroot
1 tsp. oil to grease the idli mould
Mix the batter and the veggies well. Spoon into the greased idli moulds. Bring some water to boil in the pressure cooker/ steamer and place the idli stand.
Steam for 15-18 minutes. (Do not put the weight). After 5 minutes, open the cooker and let it cool further before demoulding.
Transfer to a serving plate and relish with coconut chutney and sambar.
