Ingredients

  • Vegetable Chop-2 carrot, 2 potato, 2 beetroot, 1tbsp raw peanuts crushed, 1tbsp ginger grated, 1tsp fennel seeds,.1/2tsp cumin seeds, 1pinch Kala jeera, 2 dry red chillies,2 cardamom crushed ,1/2 inch cinnamon stick, 3 whole.black peppercorns,salt to taste, 1tsp sugar, 1cup breadcrumbs,4tbsp Cornflour,cooking oil to deep fry.

Directions

  • To begin making kolkata style vegetable chop recipe,heat a kadai & roast the dry spices(fennel,cumin seeds,cardamom,cinnamon,dry red.chilli,black peppercorn,kalonji).Let them cool down & grind to powder,keep aside.
  • Peel the vegetables,wash them well & cut into big.chunks.Cool till the first whistle goes off,remove from heat.Wait till the pressure release.Takeout the vegetables & keep in a colander to drain out all the excess water.
  • Great the cooked vegetables.
  • In a nonstick pan add some oil (1tbsp) & when the oil is hot.reduce the heat & add grated ginger & the vegetables.
  • Add the powdered spices & crushed peanuts,stir well.Add salt sugar.Cook for.5mint& then switch off the gas.Let the mixture.cooldown.
  • Make small balls.with the mixture .Give a cylindrical shape.
  • Make a thin batter by mixing water & Cornflour.Dip the vegetable balls in the batter & roll them in breadcrumbs.
  • Repeat the process..So the vegetable balls coated twice with breadcrumbs.
  • Dip fry the chops.& drain on a kitchen towel.
  • Serve hot with tea.
  • Kucho Nimki- 2cup all purpose flour(maida),.1 tbsp.kalajeera(kalonji),.2tbsp vegetable oil, water as needed, salt to taste.For frying- Vegetable oil.
  • To begin making Bengali Style kucho nimki recipe.first we start.with making the dough.
  • In a big bowl ,add flour ,salt., kalijeere & oil.Now start.mixing it,we call it Mayan.This process make nimkis more crunchy & fluffy.After 5 mint add water & make a medium dough not very soft or hard.Cover it up & rest it for.20 mint.
  • Make 2 balls out of that dough & with the help of. rolling pin.,flatten it.in medium.thickness.Make sure that they are not too thin.Thick like a tawa Paratha would do. With a knife cut the flatten dough.in diamond shape.
  • Meanwhile heat oil in a frying pan & then simmer the heat once oil is hot.
  • Fry nimkis on low heat to make it crunchy Drain each batch on paper towel before cooling them fully .
  • Serve hot .
  • Jhuri Aloo Bhaja- 3 or 4 big potatoes, 1tsp turmeric powder,salt to taste, oil for frying,few curry leaves.
  • Wash, peel & grate the potatoes using a potato grated.Place the grated potatoes.in a sieve & wash under running water.a couple of times.to remove the starch .
  • Let the potatoes sit in the sieve for a mint. Now place the potatoes on kitchen towel or paper towel to absorb the water.
  • In a mixing bowl add the potato julience & turmeric powder. Mix well to combine.Heat oil.for frying in a wok.Fry the potatoes until golden & crispy
  • Drain on paper towel & place the potato fry on serving bowls.Sprinkle with salt & curry leaves.
  • Tea- 6 cup hot water ,10 tbsp tea leaves ,1 cup evaporated milk, 1 to 2 tbsp sweetened condensed milk,a fine meshed strainer.
  • Add 6 cup.very hot water to a pot.Add the tea & bring to a boil.Turndown.the heat & simmer for 15 mint.
  • From there pour tea through a fine- meshed strainer.. Mix 1 cup milk & 1 tbsp condensed milk .Stir throughly & enjoy immediately with vegetable chop ,kucho nimki & jhuri aloo bhaja.
