Chop egg plant and pressure in 1 cup water. Until it is half cooked.
Heat oil in a wok and add mustard, when it pops add all the pastes. let the raw smell goes away.
Add onion and wait till it turn brown.
Add tomato and seasonings. Saute for 5 minutes and add the egg plant in the wok.
Cover the lid and cook until the egg plant turns mushy. Add some water and cover for 5 minutes.
Add pav bhaji masala and cook for 5 more minutes.
Add crushed peanutes on top and garnish with coriander
Serve this with buttered pav and chopped onion.
